Baked Stuffed Apples with Dried Cherries and Walnuts

Serves 4

1 1/2 tsp. pumpkin pie spice
1/3 c. dried cherries
1/3 c. roughly chopped walnuts
1/3 c. brown sugar, lightly packed
4 large Granny Smith apples
1/2 c. apple juice
1/4 c. maple syrup
1 Tbsp. butter, melted

Preheat oven to 350°F. Combine pumpkin pie spice, dried cherries, walnuts and brown sugar in a bowl. Set aside.
Core apples carefully, making sure not to cut through the bottom. Stuff brown sugar mixture in each apple. Pour apple juice in a glass casserole dish; set apples on top.
Mix the maple syrup and melted butter and drizzle over the top of the apples. Cover with tin foil and bake for 40 minutes. Remove foil and bake for an additional 20 minutes or until tender.
